This is our 7th year producing maple syrup and the fourth season producing here on the new property. We are very fortunate that the new property is lined with 100-year-old maple trees along the property's edge as well as some younger ones throughout the woods.
We started with 10 taps and a lobster pot for an evaporator. Due to demand, we began adding 10-15 new taps each year. We are now at over 100 taps. In 2022, we upgraded to a larger evaporator to help keep up with the amount of sap. In 2024, we received a grant from Berkshire Ag Ventures to purchase a reverse osmosis machine to help reduce the boiling time. The reverse osmosis (RO) machine removes 60% of the water from the sap before boiling. This cuts down on man-hours and the amount of wood needed to fire the evaporator.
One of the most common questions we receive is, 'do you add anything to the sap to create the syrup?' The answer is no, nothing is added. Everything in pure maple syrup is 100% natural and comes directly from the tree. Another common question is, 'can you produce syrup year-round?' The answer is no. Sap begins to move up the tree when daytime temperatures are in the mid-30s and nights in the 20s (the colder nights the better). The most common time of year for the production of maple syrup is late February to early April, but it has started in January in recent years
